Waldorf Astoria Kuala Lumpur announces the appointment of Malaysian culinary leader Vijayakant Shanmugam as Director of Culinary, bringing nearly three decades of international experience to the luxury hotel’s highly anticipated debut in Malaysia.
In his new role, Vijay will oversee all culinary operations across the hotel’s restaurants, lounges, banqueting and special events. He will also work closely with internationally acclaimed chefs Garima Arora and Jean Georges Vongerichten to develop a distinctive culinary programme that celebrates local flavours while introducing exceptional dining experiences to Kuala Lumpur.
Originally from Kuala Selangor, Malaysia, Vijay has built an impressive career across some of the world’s leading luxury hospitality brands, including Hilton, Shangri La, Raffles, Fairmont and Swissôtel. His experience spans Southeast Asia, the Maldives, Japan and India, where he has led multicultural culinary teams, contributed to major hotel openings and refined his expertise in garde manger, French and Nikkei cuisine. His culinary journey has also taken him to Peru for specialised training and into Michelin starred kitchens, further shaping his international perspective.
Despite his extensive global experience, Vijay remains deeply connected to his Malaysian roots. He is passionate about bringing Malaysian cuisine to the international stage, showcasing the country’s diverse culinary heritage through contemporary interpretations that honour its traditions, ingredients and distinctive flavours.
Vijay began his journey in Michelin starred gastronomy at Raffles Singapore, where he served as Executive Sous Chef under French Executive Chef Pierre Burgade. Most recently, he was Director of Culinary at Waldorf Astoria Maldives Ithaafushi, overseeing 11 dining venues, including The Ledge by Dave Pynt. Prior to that, he was part of the opening team at Hilton Singapore Orchard, contributing to the launch of Osteria Mozza by celebrated chef Nancy Silverton.
Drawing on his international expertise and understanding of Malaysia’s rich food culture, Vijay will lead the development of a culinary programme that brings together world class talent, exceptional ingredients and local culinary traditions. His appointment marks an important step in positioning Waldorf Astoria Kuala Lumpur as a destination for distinctive dining, memorable celebrations and meaningful connections.
“It’s an honour to lead the culinary vision for such a highly anticipated luxury hotel opening in Kuala Lumpur, bringing Waldorf Astoria’s storied legacy to my home country and establishing the first Malaysian outpost as ‘The Greatest of Them All’,” said Vijay.
“In a city with an already dynamic food and beverage scene, my aspiration is to set new benchmarks, and for Waldorf Astoria Kuala Lumpur to be recognized as a defining culinary destination, where world-class dining is shaped by a deep connection to local flavours, refined craftsmanship, and memorable dining experiences.”
